The bacon itself was ok, but the way the flavor seeped into the loaf was bizarre. The instructions are in my recipe, below, if you want to go for it. The pork adds a lot and keeps it nice and moist. It cuts the baking time down considerably! Meatloaf freezes very well.
Line a loaf pan with plastic wrap let it hang well over the sides , then pack in the meatloaf.
When frozen, remove from the pan, use the overlapping plastic wrap to cover it well, then wrap a second time with the foil. To bake, remove the meatloaf from the freezer and thaw overnight. By dinner it should be thawed enough to remove the wrapping and bake.
It will probably need a few more minutes in the oven. From a frugal standpoint, try to eke out two meals from this meatloaf. Salt and pepper is a must. There is nothing worse than underseasoned meat? Well, maybe undercooked or overcooked meat would be worse. But, underseasoned food is boring. The difference between a memorable meal and a just so-so meal is flavor. The perfect meatloaf sandwich requires really good bread.
For this recipe, I like to use a really good sourdough or a ciabatta roll. Another fantastic option would be focaccia. You can adapt the focaccia recipe and make it simpler if you prefer to make plain focaccia.

I actually made it without the egg and it turned out great I leave out eggs from all ground meat recipes I find without any consequence. I also forgot to add the ketchup in th eloaf mixture and it still was great! Really good recipe! Made this last night. It was the best meatloaf bar none I have made and I am an experienced cook.

Served it with steamed baby spinach and mashed potatoes with turkey gravy envelope. We are trying this recipe tonight. I did find the rolling up hard to do so I put in loaf pan and came out excellent. I am so glad to see this comment! This was delish! This dish is a keeper!!! This is delicious! Definitely will be making this again. I did use an onion instead of a shallot as well as oregano instead of the marjoram.
